The Story of Guanmiao Noodle

上智關廟麵 - 關廟麵的由來

Guan Miao Noodle is a local cuisine in Guan Miao, Tainan. It is said to have more than hundred years of history.

Back in the days, pickling and drying used to be common methods of food preservation. The sun drying process not only helps preserving these noodles, but also gives Guan Miao Noodles a unique taste and chewy texture.

Nowadays, the process of sun drying is often replaced by noodle roasting machines. However, it is hard for machines to produce the similar taste that comes from nature.

The Making Process of Guan Miao Noodle

上智關廟麵 - 關廟麵製程 - 和麵- 【和麵】是將麵粉及水依比例混合攪拌,麵粉和水的比例、攪拌時間的長短都須視天氣及溫度來決定,是製程中的關鍵所在,也是經驗老到師傅的獨門絕活。

1. Dough Formation

To make the perfect dough for Guan Miao Noodle, flour and water are mixed depending on a specific ratio. According to various factors such as mixing time, weather, and temperature, the end result may differ, which is why this process requires years of experience and expertise.

2. Dough Rolling

The process of dough rolling determines the flexibility and stretchiness of each noodle.

上智關廟麵 - 關廟麵製程 - 扭麵 - 將分條後的麵條對折再對折,放置在鏤空的篩子中,讓麵的形狀自然的成為扇形,這是古時候為了讓麵方便曬太陽及包裝、收置的製程。

3. Noodle Folding

Back in the days, people folded each portion of noodle into a “fan shape” and placed them onto bamboo woven sieves afterwards. This process has made sun drying, packaging, and storage more convenient as well.
